Cauliflower poriyal

This is recipe made very easy because of the Eastern vegetable masala powder.It is available in all the stores.

Cauliflower florets- 1 cup
 onions- 1 medium chopped finely
tomato- 1 small chopped finely.
vegetable  masala- 1 tsp(Eastern brand)
turmeric pwd- 1/2 tsp
mustard seeds- 1/4 tsp
salt.- to taste
oil- 2 tsp
coriander leaves- 1tsp chopped.
METHOD:
Wash florets with little water and salt.
Heat oil in a kadai.When hot add mustard seeds, onions .Saute well
Add tomato, vegetable masala, turmeric pwd and salt.
Fry well.Add the florets. Simmer the heat to medium .
Cover and cook until done.
See to it that the florets do not break.
Do not add water.
Garnish with coriander leaves and serve.

Uralai-kathrikai fry (potato-brinjal fry)

This is a Andhra dish that I learnt from my neighbor.It goes well with sambhar or curd rice.

Potatoes-2 peeled and cubed
brinjal -4 cubed
onion-1 chopped
oil- 3 tsp
salt - to taste
mustard seeds- 1/4 tsp
jeera-1/4 tsp

To grind:
grated coconut - 5tsp
red chillies- 5
vendhayam/methi seeds-1/4 tsp
channa dal - 1tbsp
curry leaves- 6
Roast the above ingredients and grind it.( without water).

Method:
Boil potatoes with salt in a pan for 6 minutes. It must not get mashed.
Heat oil in a non stick pan.When hot add mustard seeds, jeera.
When it splutters add onions and brinjals.Saute for 2 minutes. Sprinkle  2tsp water and little salt.
Cover and cook for 3-4 minutes.Now add potatoes and ground mixture and little salt.
Saute for 6-7 minutes until the masala has coated on the vegetables.
Serve hot.

Pudina Chutney

Pudina - 1bunch
Coriander leaves - 1/2 bunch
 Raw peanuts-1 tsp
Grated coconut-2tsp
 green chillies- 2
Tamarind- a small piece
Garlic cloves-2 chopped
Oil- 1tsp
Salt
Method:
Wash  Pudina. Remove the leaves separately .
Wash Coriander leaves also.Heat oil in a pan, roast the peanuts.
 Remove them.Then add green chilles,garlic,coconut,tamarind. Saute well.
Now add pudina and coriander leaves. Saute until the leaves wilt together .
Remove from fire.Add salt and the peanuts. Cool it . Blend it in a mixie.(Add water if necessary).
Now heat a bit of oil in a pan, add mustard seeds, and 1 red chilli.
After it splutters pour this in the pudina mix and stir well. Serve it with Dosa and Idli.
