Lemon rice


Always handy and perfect for lunch box!This will be always cooked atleast once in a week in every house in Tamilnadu or Karnataka or Andhara. Nowdays it is also offered as prasadam at temples!


Lemon Rice



Cooked rice- 1cup
onions- 2tsp finely chopped
green chilli-1 chopped
red chilli - 1
curry leaves- 1 little
coriander leaves - 1tsp chopped
salt -to taste
oil- 3-4tsp
lemon juice- 2tsp
mustard seeds- 1/4 tsp
turmeric pwd-3/4 tsp
jeera-1/4 tsp
peanuts- 1 tsp
cashews- 1 tsp
ginger - 1/2 chopped finely
channa dal- 1/2 tsp

Method:
Heat oil in a kadai.When hot add mustard seeds,channa dal, jeera, ginger, chillies ,cashews and peanuts
Add onions, curry leaves,turmeric pwd and salt.Wait until they turn pink.
Add lemon juice.Wait for a minute.
Now add rice and mix it well.
Serve hot with appalam or pickle.
